Located in the foothills of the Poas Volacano between the elevations of 1,200 and 1,500 meters, Las Lajas farm and micro mill is owned and operated by third-generation farmers, Oscar and Fransisca Chocan, and their family. This coffee consists of both yellow and red Caturra and Catuai varietals, and is processed using a method called "miel" or honey. This processing method leaves all of the fruit or "mucilage" intact on the coffee beans while they are dried, giving them a beautiful, bright yellow color. The honey processes also gives the coffee an intense sweetness, heightened complexities and a more defined body.
