Coffee beans are roasted to bring out their natural flavors. The longer the roast, the darker the coffee and the more apparent that "roasted" flavor becomes. So, which roast level would you prefer?

Different beans from different parts of the world vary widely in their basic flavors. They can be sweet like honey or ripe fruit, semisweet like pecans, or un-sweet like cinnamon or cocoa. This characteristic will determine the foundation or overall flavor of your blend. So, which one would you prefer?

Question 3: The Fruit

A lot of coffees have an apparent fruitiness to them, though which fruit is often hard to determine unless you’re a professional cupper. So, to help you decide what’s right for you, just picture yourself at your favorite bakery with your favorite cup of coffee in your hand. Believe it or not; a lot of coffees have floral tones to them as well. If you were walking through an aromatic flower garden full of blooming roses, honeysuckle and jasmine would the smell of coffee cause you to be elated or cringe?

Acidity is another flavor profile you have to consider when designing your own blend. Think of the sensory difference between eating a banana and eating an orange: the low acidity banana is subtle and calm; the highly acidic orange is tangy and stimulating. So, would you prefer a cup that flows smoothly across your tongue like the banana, or something with a little kick to it?

Body, or mouth feel, is the sensation of a coffee’s weight; it is the thickness that you feel with each sip. Full-bodied coffees have a thicker, fuller feeling while light-bodied coffees feel thinner and lighter in the mouth. Which would you prefer in your perfect cup?
